Games that use dice and the dice themselves goes all the way back to the Crusades, but modern craps is approximately a century old. Modern craps evolved from the ancient Anglo game referred to as Hazard. Nobody knows for sure the ancestry of the game, although Hazard is believed to have been invented by the Englishman, Sir William of Tyre, around the 12th century. It is theorized that Sir William’s soldiers played Hazard through a siege on the fortification Hazarth in 1125 AD. The name Hazard was derived from the castle’s name.
Early French colonizers brought the game Hazard to Nova Scotia. In the 1700s, when expelled by the British, the French moved south and settled in the south of Louisiana where they at a later time became known as Cajuns. When they were driven out of Acadia, they took their preferred game, Hazard, along. The Cajuns broke down the game and made it more mathematically fair. It’s believed that the Cajuns adjusted the name to craps, which is acquired from the name of the non-winning throw of 2 in the game of Hazard, referred to as "crabs."
From Louisiana, the game moved to the Mississippi riverboats and throughout the country. A great many consider the dice maker John H. Winn as the father of current craps. In 1907, Winn created the current craps setup. He put in place the Don’t Pass line so players could bet on the dice to not win. At another time, he created the spaces for Place bets and added the Big 6, Big 8, and Hardways.
